Meringue Mocha-Chip Recipe

Eggs are one of the basic ingredients for making cakes, ranging from pastries to wet cakes. One of the traditional Western heritage cakes, namely meringue, with egg white as a base is quite popular in Indonesia. Its texture is light and crispy, also many flavors make it a lot of likes. Both the original meringue flavor dipped in melted chocolate, or various ingredients mixed in the dough, are very appetizing.

Ingredients :

  • 100 grams of sugar
  • 1 tbsp cornstarch
  • 3 egg whites
  • ¼ tsp salt
  • 1 tsp of instant espresso powder
  • 3 tablespoons of fresh cocoa powder
  • ½ cup chocolate chip

How to make :

  1. Preheat the oven to 170ºC, cover the baking pan with baking paper.
  2. Mix the sugar and cornstarch in a container, stir and set aside
  3. Mix egg white and salt, beat with medium speed mixer until it expands. Add sugar mixture little by little while stirring until shiny and stiff, about 6-8 minutes.
  4. Add espresso powder and chocolate powder, stirring until well blended.
  5. Use a rubber spatula, put the chocolate chip into the mixture.
  6. Take the dough with a tablespoon, drop it into the pan provided, give it a distance. Bake until cooked for about 40 minutes.
  7. Set aside the cooked cookies, cool.
